Instructions

Season sliced beef with cumin, garlic, salt, and pepper.

Cook rice according to package directions.

Heat 1 tbsp coconut oil in a skillet over high heat. Sear beef strips 2-3 minutes until browned. Remove.

Peel and slice plantain into 1/2-inch rounds. Add remaining coconut oil to the pan.

Fry plantain slices 3-4 minutes per side until golden and caramelized.
