Instructions

Peel plantains and slice diagonally into 1/2-inch pieces.

Season pork cubes with garlic powder, cumin, salt, and pepper.

Heat 1 tbsp coconut oil in a skillet over medium heat. Cook pork 6-8 minutes until golden and cooked through.

Remove pork. Add remaining coconut oil and fry plantain slices 3-4 minutes per side until caramelized.

Warm black beans in a small pot.
