Instructions

Season ribs with oregano, salt, and pepper.

Heat olive oil in a large pot. Brown ribs on all sides, about 3-4 minutes per side.

Add sofrito and cook 2 minutes. Add water to cover, bay leaf, and bring to a boil.

Reduce heat, cover, and simmer 45 minutes until ribs are tender.

While ribs cook, prepare rice. In a separate pot, warm pink beans with a spoonful of sofrito.
